Kefirde bulunan mikroorganizmalar probiyotik potansiyele sahiptir. \u2018Fonksiyonel g\u0131dalar aras\u0131nda yer alan\u2019 sa\u011fl\u0131\u011fa yararl\u0131 oldu\u011fu kan\u0131tlanm\u0131\u015f ve canl\u0131 mikroorganizmalar i\u00e7eren ya da bunlar taraf\u0131ndan \u00fcretilen g\u0131dalar probiyotik olarak adland\u0131r\u0131lmaktad\u0131r. Kefir, kefir daneleri taraf\u0131ndan olu\u015fturulan, do\u011fal probiyotikler ile bir\u00e7ok laktik asit bakterisi ve maya i\u00e7eren fermente bir s\u00fct \u00fcr\u00fcn\u00fcd\u00fcr. Kefirin i\u00e7eri\u011findeki \u00e7ok say\u0131da bakteri t\u00fcr\u00fc, gastrointestinal kanaldaki d\u00fc\u015f\u00fck pH\u2019a ve safra tuzlar\u0131na kar\u015f\u0131 y\u00fcksek diren\u00e7 g\u00f6stermektedir ve ba\u011f\u0131rsak mukusuna yap\u0131\u015fabilmektedir. Ayr\u0131ca, kefirde bulunan mikrobiyota ba\u011f\u0131rsak mukozas\u0131ndaki hastal\u0131k yap\u0131c\u0131 bakterilerin yap\u0131\u015fmas\u0131n\u0131 engelleyerek ba\u011f\u0131rsak sa\u011fl\u0131\u011f\u0131n\u0131n iyile\u015ftirilmesine katk\u0131da bulunur.<\/p>\n\n\n\n<p>Kefirin besinsel bile\u015fimi; s\u00fct\u00fcn i\u00e7eri\u011fi, fermantasyon s\u00fcresi\/s\u0131cakl\u0131\u011f\u0131 ve saklama ko\u015fullar\u0131na g\u00f6re b\u00fcy\u00fck \u00f6l\u00e7\u00fcde de\u011fi\u015fmektedir. Kefir, esansiyel aminoasit dedi\u011fimiz v\u00fccutta sentezlenemedi\u011fi i\u00e7in d\u0131\u015far\u0131dan al\u0131nmas\u0131 zorunlu olan aminoasit miktar\u0131 a\u00e7\u0131s\u0131ndan da olduk\u00e7a zengindir. Kefir t\u00fcketime haz\u0131r oldu\u011funda zengin bir vitamin bile\u015fimi i\u00e7erir. Kefir, bile\u015fiminde B1, B2, B5, C, A ve K vitaminleri ile karoten i\u00e7erir. Mineraller aras\u0131nda kefir iyi bir magnezyum, kalsiyum ve potasyum kayna\u011f\u0131d\u0131r. Laktoz intolerans\u0131 olan ki\u015filerde a\u011f\u0131z kokusu tedavisinde de kefirin yo\u011furt kadar etkili oldu\u011fu bulunmu\u015ftur. Yani daha uzun s\u00fcreli tokluk i\u00e7in tercih edilebilir.<\/p>\n\n\n\n<p>Kefir mikrobiyatas\u0131nda bulunan biyoaktif bile\u015fikler, enfeksiyonlara ve h\u00fccre i\u00e7i hastal\u0131k yap\u0131c\u0131 bakterilere kar\u015f\u0131 h\u00fccre ba\u011f\u0131\u015f\u0131kl\u0131\u011f\u0131n\u0131 desteklemektedir b\u00f6ylece inflamasyon azalt\u0131c\u0131 etkisi de vard\u0131r.Ek olarak, kefirin biyoaktif bile\u015fikleri, baz\u0131 enzimleri engelleyerek, kanserin ba\u015flamas\u0131n\u0131 \u00f6nleyebilir veya ba\u015flat\u0131lan t\u00fcm\u00f6r b\u00fcy\u00fcmesini bask\u0131layabilir.
