D\u0131\u015f tabakas\u0131 ya\u011f ve protein bak\u0131m\u0131ndan zengindir. Di\u011fer tah\u0131llara g\u00f6re daha y\u00fcksek oranda embriyo oran\u0131 (yakla\u015f\u0131k% 25) vard\u0131r. Bu nedenle amaranth daha fazla ya\u011f i\u00e7erir. Amaranth proteinleri yakla\u015f\u0131k % 40 alb\u00fcmin, % 20 glob\u00fclin, % 25-% 30 glutelinler ve % 2 ila% 3 prolaminlerden olu\u015fur. 2.9 &#8211; 4.2 mg sistin, 1.7-2,3 mg metionin, 0.8-1.8 mg triptofan i\u00e7erir. Deniz kaynaklar\u0131ndan elde edilen kaynaklara alternatif olarak \u00f6nerilmi\u015ftir. Amaranthta en fazla bulunan ya\u011f asidi linoleik asittir (% 33.0-55.9), bunu oleik asit (% 18.7-38.9), palmitik asit (% 14.04-% 26.0) ve stearik asit (% 3.11-4.47) takip etmektedir.
